Pale yellow with golden highlights. Bright with ripe white fruit such as apple and peach. Notes of aniseed and fennel. There is a nice balance between notes of freshly baked bread and subtle citrus peel aromas. Dried nuts. Subtle toast and yeast notes with buttery aromas. Wide on entry, full and creamy on the palate. Velvet-like bubbles. Refreshing finish. The white flowers and fruit aromas come through again on the palate against a backdrop of freshly baked bread.
Food Matching: Gramona Imperial is particularly versatile and can be enjoyed throughout the meal, from the ‘aperitif’ through to the ‘digestif’.
Vineyard: Gramona are steeped in history and revered for their long lees aging, a process that came from the neccesity of having to block up their cellars to avoid looting during the Spanish Civil War. The biggest asset is the land and they have gone to great lengths to recover the soils and now have a fully integrated biodynamic approach where all preparations are made on site and cover crops are spontaneously sown. The vines share the land with chickens, cows, sheep and horses all in an effort to maintain a natural equilibrium within the soil. Heralded as the finest Sparkling Wines of Spain their hard work has paid off winning high praise from all critics as the only Spanish house to rival top Vintage Champagne. Truly an artisan product, the wines which see more than 5 years lees aging are all aged on cork as it slows the oxidation process. This means these wines are all riddled and disgorged by hand (you can still see the chalk mark in the punt of the bottle where it was turned during riddling.
Vinification: Ageing Aged on their lees “sur lattes” for over 60 months. Varieties 50% Xarel.lo, 30% Macabeo, 15% Chardonnay, 5% Parellada Each grape variety is vinified separately. Dosage 8 grams/litre We assume responsibility for each and every step involved in the winemaking process, from the vine to the bottle. The grapes are picked by hand in left in boxes of 25 kg each, go onto a sorting belt, are transferred by gravity, and pressed whole bunch. We use heads and hearts (52.5%) of the must fraction with our presses specialized in the pressing of whole grapes, coming from 12 different plots of our association Aliances per la Terra. The touch of ‘expedition liqueur’ from our solera, which is well over a century old, gives this sparkling wine our unmistakable signature, a symbol of elegance that has made this sparkling wine a classic for its loyal drinkers. Medium dosage of 8 grams/litre.

Viticulture The vineyard consist of 33 year old vines planted at a density of 5500 vines per hectare, on clay limestone and gravel soils. The East to West facing vineyards produce yields of up to 49 hl/ha. Grapes are machine harvested in September. Vinification Grapes are double manually sorted in both vineyard and winery, then subsequently destemmed but not crushed, going through a brief period of maceration on its skins before being pneumatically pressed. Fermentation took place in stainless steel tanks, and the wine goes through further maceration post fermentation. The wine is then matured in French 225L oak barrels for 15 months, of which 80% was new oak.

Wild-ferment Chardonnay with the rich texture of double cream restrained by a fine minerality, overflowing with melon and peach and scented with long-lasting notes of vanilla.
