- Vinification: After several years of research, we have developed a winemaking process adapted to guarantee the most sincere expression of Malbec. Although kept secret by the cellar master, Vigouroux will reveal some elements. Destemmed, lightly crushed, low temperature fermentation in thermo-regulated stainless steel tanks and gentle extraction to preserve the fruit. Separate vinification of selected blocks and final blend after the malolactic fermentation.
