- Food Matching: The wine can be enjoyed with a broad variety of dishes from delicately flavoured fish dishes through to chicken and pork.
- Vineyard: Almost no chemicals are used in the vineyards apart for protection against mildew. All grapes are hand harvested, pressed and fermented in barrel at not more than 25° C. The entire crop is barrel fermented which gives additional depth and intensity to the wines. 20% of the barrels are larger (400 litres) giving richness without showing too much oak expression. Low batonnage and the malolactic fermentation normally starts late, probably due to the relatively cold temperature in the underground cellar. The wines are not racked before September and have been bottled as late as January, some 16 months after the harvest.
- Vinification: Alain’s cellar is located in the basement of an outbuilding adjoining his house. Whilst vinification is traditional, with all the wines being fermented and matured in traditional French oak “barriques”, Alain has installed ambient temperature control throughout his cellar to ensure optimum maturation conditions.

2018 Chateau Ste. Ange, St-Emilion Grand Cru
Viticulture The vineyard consist of 33 year old vines planted at a density of 5500 vines per hectare, on clay limestone and gravel soils. The East to West facing vineyards produce yields of up to 49 hl/ha. Grapes are machine harvested in September. Vinification Grapes are double manually sorted in both vineyard and winery, then subsequently destemmed but not crushed, going through a brief period of maceration on its skins before being pneumatically pressed. Fermentation took place in stainless steel tanks, and the wine goes through further maceration post fermentation. The wine is then matured in French 225L oak barrels for 15 months, of which 80% was new oak.
