Food Matching: Ideal with crab, scallops, mild cheeses, spiced Asian dishes and Indian curries. The winemaker's personal recommendation is freshly shucked oysters.
Vineyard: Riesling fruit for the Dry Riesling comes from our best grower vineyards in the Columbia Valley. Sunny days and cool evening temperatures create ideal conditions for intense aroma and flavour development in the ripening grapes. Riesling grapes were picked under cool nighttime skies to preserve the variety’s bright, juicy style and retain the natural acidity.
Vinification: The winemaker hand selected particular lots of grapes to create this elegant, dry style of Riesling, while maintaining its beautiful fruit character. The wine underwent a cool fermentation in stainless steel tanks to preserve the freshness and bright fruit qualities of the grapes.
