  • Tasting Note: Marked mineral characters and a wide complexity of aromas. Enticing and delicate aromas of tropical fruits, wildflowers, green apple and citrus peel exude from the glass. The palate offers white peach, green melon, and grapefruits with a crisp acidity.
  • Food Matching: Seafood like oysters, shrimp, scallops, or white fish. Sauted green vegetables, salads - all prefect for this fragrant and lively wine.
  • Vineyard: Shaya was the realisation of Miguel Gil's dream to make authentic Verdejo wines from authentic vines. As such he set out in search of the finest pre-phylloxera vineyards he could. In 2008 he made the first vintage but still didn't have a name. Just at that moment a local wildlife centre had rescued a small deer and named it Shaya. Just as the rescue centre saw something worth saving in the striking deer, Miguel had seen the same in these old forgotten vineyards and as such, the name was born. This particular vineyard is located to the west of Segovia. The vines are planted on sandy soils covered by river gravel. The grapes are hand picked from 25 hectares of Sauvignon Blanc, and then destemmed and transfered to tank presses, the juice is then clarified and racked into stainless steel fermentation tanks. From there a slow, temperature controlled fermentation is undertaken. After, a short period of lees contact the wine is bottled young to preserve the crisp and elegant varietal and soil characteristics.
