Vinification: The grapes were picked at night to retain freshness and pressed under CO2 before a period of cold maceration in stainless steel vats. The must was fermented in temperature controlled vats at approximately 22°C followed by a short period of lees ageing (2 months) to enhance the distinctive fruit character and texture.
