Vineyard: Sospiro’s Pinot Grigio vineyards are located north of Verona, at an elevation of 250 to 300 metres that ensures good sunlight exposure with a cool climate, retaining acidity and delicate fruit flavours. Harvests take place at the end of August.
Vinification: Pinot Grigio grapes are crushed in parcels and left to cold macerate, giving the wine its distinctive salmon blush. Each parcel is macerated for a different length of time and blended after fermentation, ensuring a standard colour. Fermentation occurs in temperature controlled steel tanks, and no oak is used throughout the process.
