Food Matching: This classic Loire Sauvignon can be perfectly matched to numerous spicy dishes as well as Pork, Shellfish, fresh vegetables and stunning with Goats cheeses.
Vineyard: Frank and his wife Betty are the third generation of the family carrying on the winemaking traditions in their vineyards in Bue just 4KM from Sancerre itself. The couple work 23 Hectares under vine where hand picking and selection of the grapes is of paramount importance to ensure the typicity of the resulting wine.
Vinification: Sauvignon Blanc grapes from the village of Bue are pressed as soon as they are picked. The juice is then allowed to settle, ahead of the alcoholic fermentation which is temperature controlled. The fermentation takes place between 14°C to 17°C. Low temperature fermentation means a longer fermentation is possible which allows a gentler extraction of primary fruit, which is preserved and defines the character of the wine.
