Vineyard: This wine is 100% Godello grown on trellised vines planted at a density of 2,200 plants/ha. The soil is predominantly slate and granite & the vineyard sits at an altitude of around 400m in the valley of the river Sil. It is a small vineyard and all the grapes are picked by hand.
Vinification: The grapes are all picked by hand. Following manual selection on the selection table, the clusters are destemmed and the berries pass through a cooler that lowers their temperature to 9ºc to preserve their aromatic qualities. After 4 hours maceration, the berries are gently pressed to obtain must of the highest quality. Following temperature controlled fermentation in stainless steel, the wine is racked off the lees, settled naturally and is then bottled.
