Bodega Ramón do Casar has 8 hectares of their own vineyards, located on the banks of the river Miño.
The vines were planted in 2000 with local varieties, on granitic soils, at 350 meters of altitude and with the influence of the oceanic-Atlantic climate.
At the head of the technical direction is Pablo Estévez, a young winemaker recognised for producing great white wines in this area. He personally supervises each crop and cultivation process, from pruning to harvesting, to ensure that all the grapes have an excellent quality when they are harvested.

Harvesting is carried out manually, selecting the grapes in the vineyard and in the winery, on a selection table. Before fermenting, the grapes are destemmed and crushed. Then, through a cold exchanger, the grapes are taken to the press, where they will produce the must for the fermentation by using slight pressure. The must ferments under controlled temperature throughout the entire process. Before bottling, the wine remains with its lees to gain complexity.
