The ageing makes the wine perform balanced and complex. In the mouth the wine is mouth-filling, elegant and fruit forward. It has an outstanding balance between its freshness and structure. Food Matching: Perfect pairing with Tuna tartar, seafood paella and shell fish.
Vineyard: Rocky soil with slate, quartz and clay. The Vineyard sits between 450 and 700 meters above sea level, with very little rain, strong winds and a lot of sun. The fruit is harvested at night.
Vinification: This layered white has been aged 2 months in French oak barrels on lees.
