  • Tasting Note: Pinot Noir from a single block on Australia's Mornington Peninsula, so perfumed it’s intoxicating before you take a drop: sandalwood, red fruits, kola nut and dried orange peel, the aromatic promise delivered in tangy, satisfying mouthfuls.
  • Food Matching: Elegant and fruity, this will pair well with a broad selection of meats, game, chicken, lamb, beef.
  • Vineyard: Planted exclusively to Pinot Noir, the Haven block is the most sheltered of the vineyard blocks. It is a relatively level site surrounded by thick tree belts which protect it from strong winds. The soils are classed as a duplex loam over clay, have a relatively higher percentage of loam and a moderate amount of sandstone pebbles interspersed through the soil profile. The lack of exposure to strong winds allows the vines to keep a rich green canopy until comparatively late in the ripening period and the resulting Haven Pinot Noir possesses fruit in the more purplish spectrum with a certain richness and lushness yet a firm underlying tannic structure. Regal and poised, Haven shows excellent capacity for ageing.
  • Vinification: The fruit was entirely destemmed, and fermentation took place in large-format concrete and wooden tanks. Fermentation occurred spontaneously with ambient yeasts and lasted for 19 days. Following fermentation, the wine was pressed and racked into French oak barriques (of which 20% were new) and underwent indigenous malolactic fermentation. The wine was racked only once, with the total maturation period lasting 14 months. It was then bottled without fining or filtration.
