- Vineyard: After 19 years running his family vineyard in the Adelaide Hills, following a PD diagnoses it was clear that he needed to start a new chapter, create his own brand with the 3 superstar varieties of 'the hills' and direct proceeds to Parkinsons research. Sustainable Vineyard practices using VSP trellis, hand pruned, shoot thinned and colour thinned at veraison.
- Vinification: Picked in cool of the early morning, whole berries were tipped into 2 x 1.5T open fermenters and left to slowly form a cap over the juices released. Foot trodden to mix skins through and start natural fermentation for 10 days. Pressed off, straight to new and seasoned 100% French oak barriques for 10 months maturation.
