- Food Matching: Great with duck and plum sauce, also chicken and beef teriyaki.
- Vinification: The juice is cold soaked pre ferment for 5 days, then extended soaking after fermentation for up to 7 days. All the juice relies on indigenous, wild yeasts to complete fermentation. All of the wine then goes through malolactic fermentation in French oak barrels (20% new).
